Wholesome Crockpot Beef Stew

A hearty and comforting stew made with tender beef and vegetables, perfect for cold days.

Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 3 medium carrots, sliced
  • 2 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Worcestershire sauce
  • 2 cups green beans, trimmed

Instructions

  1. In a large bowl, toss the beef with salt, pepper, and thyme.
  2. In a crockpot, combine the beef, broth, carrots, potatoes, onion, garlic, tomato paste, and Worcestershire sauce.
  3. Set the crockpot to low and cook for 6-8 hours, or until the beef is tender.
  4. About 30 minutes before serving, add the green beans to the stew.
  5. Adjust seasoning to taste and serve hot.

Notes

  • For a thicker stew, add a cornstarch slurry during the last hour of cooking.
  • Feel free to add other vegetables like peas or corn.
