- 2 pounds beef chuck, cut into 1-inch pieces
- 4 cups beef broth
- 3 medium carrots, sliced
- 2 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon Worcestershire sauce
- 2 cups green beans, trimmed
- In a large bowl, toss the beef with salt, pepper, and thyme.
- In a crockpot, combine the beef, broth, carrots, potatoes, onion, garlic, tomato paste, and Worcestershire sauce.
- Set the crockpot to low and cook for 6-8 hours, or until the beef is tender.
- About 30 minutes before serving, add the green beans to the stew.
- Adjust seasoning to taste and serve hot.
