  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 1 cup sour cream
  • 3 large eggs
  • 1/2 cup fresh lemon juice
  • 1 cup strawberries, pureed

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of a springform pan.
  3. In a large mixing bowl, beat cream cheese until smooth. Gradually add sugar, then mix in sour cream.
  4. Add eggs one at a time, beating well after each addition. Mix in lemon juice and strawberry puree until combined.
  5. Pour the cheesecake mixture over the crust in the pan.
  6. Bake for 50-60 minutes until center is set. Let it cool before refrigerating.
  7. Chill for at least 4 hours before serving.
