Spanish Beans & Eggs

Ingredients

  • 4 slices turkey bacon
  • 1 can black beans
  • 4 large eggs
  • 1 onion, chopped
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt to taste
  • Pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a skillet, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same skillet, add onions and bell peppers, sauté until soft.
  3. Add garlic and sauté for another minute.
  4. Stir in the black beans, cumin, paprika, salt, and pepper.
  5. Make four wells in the mixture and crack an egg into each well.
  6. Cover the skillet and cook until the eggs are set to your liking.
  7. Serve hot, garnished with crumbled turkey bacon and fresh cilantro.

Notes

  • For a spicy kick, add jalapeños.
  • Substitute the turkey bacon with regular bacon for a richer flavor.
