Slow Cooker Stuffed Bell Peppers

Delicious slow cooker stuffed bell peppers filled with turkey bacon and beef, perfect for a comforting meal.

  • 4 large bell peppers
  • 1 pound ground beef
  • 4 ounces turkey bacon, chopped
  • 1 cup cooked rice
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Prepare the bell peppers by cutting the tops and removing the seeds.
  2. In a skillet, cook the turkey bacon until crispy, then add the ground beef and brown it.
  3. Add the cooked rice, diced tomatoes, onion, garlic, Italian seasoning, salt, and pepper to the beef mixture. Stir well to combine.
  4. Stuff the bell peppers with the mixture.
  5. Place the stuffed peppers in the slow cooker and cook on low for 6-8 hours.
  6. Serve hot and enjoy!

Notes

  • For added flavor, sprinkle cheese on top during the last 30 minutes of cooking.
