Slow Cooker Cowboy Potato Casserole: Your New Go-To for Hearty Weeknight Meals

Ingredients

  • 2 pounds potatoes, diced
  • 1 pound bacon, cooked and crumbled
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 can cream of chicken soup
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Layer the diced potatoes in the bottom of the slow cooker.
  2. In a bowl, mix together the sour cream, cream of chicken soup, garlic powder, onion powder, salt, and pepper.
  3. Pour the mixture over the potatoes and stir to combine.
  4. Top with crumbled bacon and shredded cheddar cheese.
  5. Cover and cook on low for 6-7 hours or until the potatoes are tender.

Notes

  • For extra flavor, add chopped green onions or bell peppers.
  • Can be made ahead of time and reheated.
