- 2 pounds chicken thighs
- 2 tablespoons olive oil
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander
- 1 tablespoon paprika
- 1 teaspoon turmeric
- 1 teaspoon cinnamon
- 4 cloves garlic, minced
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 large onion, sliced
- 1 lemon, juiced
- In a large bowl, combine olive oil, cumin, coriander, paprika, turmeric, cinnamon, garlic, salt, and pepper.
- Add chicken thighs to the bowl and coat them evenly with the spice mixture.
- Place sliced onions in the bottom of the slow cooker and add the spiced chicken on top.
- Pour lemon juice over the chicken.
- Cover and cook on low for 6-8 hours or on high for 4 hours.
- Once cooked, shred the chicken with two forks and mix with the onions and juices.
- Serve with pita, rice, or salad.
