Slow Cooker Beef Manhattan

Ingredients

  • 2 pounds beef chuck roast
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 can diced tomatoes (14.5 oz)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 slices of bread, for serving

Instructions

  1. Place the sliced onion and minced garlic at the bottom of the slow cooker.
  2. Put the beef chuck roast on top of the onions and garlic.
  3. In a bowl, mix together beef broth, diced tomatoes, Worcestershire sauce, thyme, salt, and pepper. Pour the mixture over the beef.
  4. Cover and cook on low for 8 hours or until the beef is tender.
  5. Once cooked, shred the beef with two forks and mix it with the sauce.
  6. Serve the beef mixture on slices of bread.

Notes

  • For a thicker sauce, remove the beef after cooking and simmer the sauce on high for 15 minutes.
  • Great served with a side of mashed potatoes.
