- 2 pounds beef chuck, cut into 1-inch cubes
- 1 bottle red wine
- 3 cups beef broth
- 4 ounces bacon, diced
- 2 cups carrots, sliced
- 1 cup onions, chopped
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon thyme
- 2 bay leaves
- 1 pound mushrooms, quartered
- 3 tablespoons flour
- 1 tablespoon olive oil
- Salt and pepper to taste
- In a skillet, cook the bacon until crispy. Remove and set aside.
- In the same skillet, sear the beef until browned on all sides.
- Transfer the beef to the slow cooker and add carrots, onions, garlic, and mushrooms.
- Add the cooked bacon, wine, beef broth, tomato paste, thyme, and bay leaves to the slow cooker.
- Stir in the flour and mix well.
- Season with salt and pepper.
- Cover and cook on low for 8 hours or until the beef is tender.
