Slow Cooker Beef Bourguignon

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1 bottle red wine
  • 3 cups beef broth
  • 4 ounces bacon, diced
  • 2 cups carrots, sliced
  • 1 cup onions, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme
  • 2 bay leaves
  • 1 pound mushrooms, quartered
  • 3 tablespoons flour
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a skillet, cook the bacon until crispy. Remove and set aside.
  2. In the same skillet, sear the beef until browned on all sides.
  3. Transfer the beef to the slow cooker and add carrots, onions, garlic, and mushrooms.
  4. Add the cooked bacon, wine, beef broth, tomato paste, thyme, and bay leaves to the slow cooker.
  5. Stir in the flour and mix well.
  6. Season with salt and pepper.
  7. Cover and cook on low for 8 hours or until the beef is tender.

Notes

  • Consider adding herbs de provence for extra flavor.
