  • 2 pounds beef chuck, cut into 1-inch pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons all-purpose flour
  • 4 slices bacon, diced
  • 1 cup carrots, sliced
  • 1 cup onions, chopped
  • 2 cloves garlic, minced
  • 2 cups red wine
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 pound mushrooms, quartered

Instructions

  1. Season the beef with salt, pepper, and flour.
  2. Cook the bacon in a skillet until crispy, then remove and set aside.
  3. Add onions, carrots, and garlic to the skillet and sauté until soft.
  4. In the slow cooker, combine the beef, bacon, sautéed vegetables, red wine, beef broth, tomato paste, thyme, and bay leaf.
  5. Cover and cook on low for 8 hours or until the beef is tender.
  6. In the last 30 minutes, add the mushrooms.
  7. Serve hot.
