Rotisserie Chicken Mushroom Soup

A warm and hearty soup made with rotisserie chicken and mushrooms.

Ingredients

  • 2 cups cooked rotisserie chicken, shredded
  • 8 ounces mushrooms, sliced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 4 cups chicken broth
  • 1 teaspoon thyme
  • 1/2 teaspoon pepper
  • 1/4 cup heavy cream

Instructions

  1. In a large pot, sauté onions, carrots, and celery until soft.
  2. Add mushrooms and cook until tender.
  3. Stir in the chicken, chicken broth, thyme, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Stir in the heavy cream before serving.
