Rotisserie Chicken Mushroom Soup

Ingredients

  • 2 cups shredded rotisserie chicken
  • 1 cup sliced mushrooms
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until soft.
  2. Stir in mushrooms and cook until they are browned.
  3. Add the shredded chicken, chicken broth, and thyme. Bring to a boil.
  4. Reduce heat and stir in heavy cream. Simmer for 5 minutes.
  5. Season with salt and pepper to taste. Serve hot.

  • This soup can be made ahead and stored in the refrigerator for up to 3 days.
  • For a thicker soup, blend a portion and stir back into the pot.
