  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup walnuts, chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, cream the softened butter and sugar until light and fluffy.
  4. Add the pumpkin puree, eggs, and vanilla extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients and stir until combined.
  6. Fold in the chopped walnuts.
  7. Pour the batter into a greased baking pan and smooth the top.
  8. Bake for about 30-35 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow to cool before serving.

Notes

  • For an extra touch, top with cream cheese frosting.
  • This cake can also be made with pecans instead of walnuts.
