  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 cups cream cheese, softened
  • 1 cup pumpkin puree
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon salt

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a medium bowl, combine graham cracker crumbs and melted butter, then press mixture into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat the cream cheese and sugar until smooth.
  4. Add in the pumpkin puree, eggs, vanilla extract, and spices, mixing until well combined.
  5. Pour the pumpkin mixture over the crust in the springform pan.
  6. Bake for 55-60 minutes or until the center is set.
  7. Allow to cool to room temperature, then refrigerate for at least 4 hours before serving.
