Pineapple Upside Down Sugar Cookies That Delight Every Bite

Pineapple Upside Down Sugar Cookies are a delightful twist on a classic treat, combining the tropical sweetness of pineapple with the rich flavor of sugar cookies.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped pineapple (fresh or canned)
  • 1/2 cup brown sugar
  • 1/4 cup maraschino cherries

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, cream together butter and granulated sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. Combine flour, baking soda, and salt; gradually stir into the creamed mixture.
  5. Fold in the chopped pineapple.
  6. In a separate bowl, mix brown sugar and cherries.
  7. Drop spoonfuls of dough onto a baking sheet, pressing the cherry and brown sugar mixture into the top of each cookie.
  8. Bake for 10-12 minutes, or until the edges are lightly browned.
  9. Allow to cool on a wire rack before serving.

Notes

  • For a chewier cookie, chill the dough for 30 minutes before baking.
  • These cookies can also be decorated with a drizzle of icing.
