- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chopped pineapple (fresh or canned)
- 1/2 cup brown sugar
- 1/4 cup maraschino cherries
- Preheat oven to 350°F (175°C).
- In a large bowl, cream together butter and granulated sugar until smooth.
- Beat in the eggs one at a time, then stir in the vanilla.
- Combine flour, baking soda, and salt; gradually stir into the creamed mixture.
- Fold in the chopped pineapple.
- In a separate bowl, mix brown sugar and cherries.
- Drop spoonfuls of dough onto a baking sheet, pressing the cherry and brown sugar mixture into the top of each cookie.
- Bake for 10-12 minutes, or until the edges are lightly browned.
- Allow to cool on a wire rack before serving.
Notes
- For a chewier cookie, chill the dough for 30 minutes before baking.
