A delicious recipe for overnight blueberry French toast casserole that is both easy to prepare and perfect for brunch.

  • 1 loaf Brioche bread
  • 2 cups fresh blueberries
  • 6 large eggs
  • 2 cups milk
  • 1 tablespoon vanilla extract
  • 1/4 cup maple syrup
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup powdered sugar

Instructions

  1. Cut the brioche bread into cubes and place in a greased baking dish.
  2. Sprinkle blueberries evenly over the bread cubes.
  3. In a bowl, whisk together eggs, milk, vanilla, maple syrup, cinnamon, and salt.
  4. Pour the egg mixture over the bread and blueberries. Cover and refrigerate overnight.
  5. The next morning, preheat the oven to 350°F (175°C).
  6. Bake uncovered for 45-55 minutes until golden and puffed up.
  7. Dust with powdered sugar before serving.
