My Fave Birria Tacos

  • 2 pounds beef chuck roast
  • 1 onion diced
  • 5 cloves garlic minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 4 cups beef broth
  • 3 bay leaves
  • 12 corn tortillas
  • 1 cup chopped cilantro
  • 1 lime cut into wedges

Instructions

  1. In a large pot, brown the beef chuck roast over medium heat.
  2. Add the diced onion, minced garlic, ground cumin, and oregano; sauté until fragrant.
  3. Pour in the beef broth and add the bay leaves.
  4. Cover and simmer for 2-3 hours until the meat is tender and easily shredded.
  5. Remove the meat, shred it, and return it to the pot, discarding the bay leaves.
  6. Heat the corn tortillas in a pan and fill them with the beef mixture.
  7. Top with cilantro and a squeeze of lime before serving.
