  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk

Instructions

  1. Preheat the oven to 350°F (175°C) and grease the mini bundt pans.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla.
  4. In another bowl, sift together the flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the creamed mixture, alternating with buttermilk, beginning and ending with dry ingredients.
  6. Pour the batter into the prepared bundt pans, filling each about 2/3 full.
  7. Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
  8. Let cool in pans for 10 minutes before inverting onto a wire rack.
