- 1 pound Italian sausage
- 1 can white beans, drained and rinsed
- 4 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 bay leaf
- Salt and pepper to taste
- 2 cups kale, chopped
- In a large pot, cook the Italian sausage over medium heat until browned. Remove and drain excess fat.
- Add the onion, garlic, carrots, and celery to the pot and sauté until softened.
- Stir in the chicken broth, white beans, thyme, oregano, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add kale and cook for an additional 5 minutes until wilted.
- Season with salt and pepper before serving.
Notes
- This soup can be made ahead and stored in the refrigerator for up to 3 days.
- Freezing is also an option, just leave out the kale and add it fresh when reheating.
