Italian Sausage White Bean Soup

A comforting and hearty Italian sausage white bean soup that’s easy to make and perfect for any day of the week.

Ingredients

  • 1 pound Italian sausage
  • 1 can white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 cups kale, chopped

Instructions

  1. In a large pot, cook the Italian sausage over medium heat until browned. Remove and drain excess fat.
  2. Add the onion, garlic, carrots, and celery to the pot and sauté until softened.
  3. Stir in the chicken broth, white beans, thyme, oregano, and bay leaf.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Add kale and cook for an additional 5 minutes until wilted.
  6. Season with salt and pepper before serving.

Notes

  • This soup can be made ahead and stored in the refrigerator for up to 3 days.
  • Freezing is also an option, just leave out the kale and add it fresh when reheating.
