  • 1 cup Greek yogurt
  • 1/2 cup brown sugar
  • 1/4 cup honey
  • 1/3 cup melted coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mix the oats, Greek yogurt, brown sugar, honey, coconut oil, eggs, and vanilla until well combined.
  3. In another bowl, whisk together the flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients and stir until just combined. Fold in the chocolate chips.
  5. Divide the batter among the muffin cups and bake for 18-20 minutes or until a toothpick comes out clean.
  6. Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
