- 4 medium sweet potatoes
- 1 pound ground turkey
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1/2 cup salsa
- 1 cup shredded cheese
- 1 avocado, sliced
- Preheat the oven to 425°F (220°C).
- Wash and pierce the sweet potatoes with a fork. Bake for 45-50 minutes until tender.
- In a skillet, cook the ground turkey over medium heat until browned. Add onion and garlic, cooking until softened.
- Stir in the cumin, paprika, black beans, corn, and salsa. Cook for an additional 5 minutes.
- Once sweet potatoes are baked, cut them open and fluff the insides with a fork.
- Stuff each sweet potato with the turkey mixture and top with shredded cheese.
- Return to the oven for 5-10 minutes until cheese is melted.
- Serve topped with avocado slices.
