High Protein Ground Turkey Stuffed Sweet Potato

A delicious and nutritious dish featuring high protein ground turkey stuffed into sweet potatoes, perfect for a healthy meal.

  • 4 medium sweet potatoes
  • 1 pound ground turkey
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1/2 cup salsa
  • 1 cup shredded cheese
  • 1 avocado, sliced

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and pierce the sweet potatoes with a fork. Bake for 45-50 minutes until tender.
  3. In a skillet, cook the ground turkey over medium heat until browned. Add onion and garlic, cooking until softened.
  4. Stir in the cumin, paprika, black beans, corn, and salsa. Cook for an additional 5 minutes.
  5. Once sweet potatoes are baked, cut them open and fluff the insides with a fork.
  6. Stuff each sweet potato with the turkey mixture and top with shredded cheese.
  7. Return to the oven for 5-10 minutes until cheese is melted.
  8. Serve topped with avocado slices.
