1 cup whole wheat flour
1 cup all-purpose flour
1 cup pumpkin puree
1/2 cup Greek yogurt
1/2 cup honey or maple syrup
2 large eggs
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
Instructions
Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
In a large bowl, mix together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
In another bowl, combine the pumpkin puree, Greek yogurt, honey (or syrup), and eggs.
Stir the wet ingredients into the dry ingredients until just combined.
Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
