  • 2 cups hash browns
  • 1 cup diced ham
  • 1 cup shredded cheese
  • 4 eggs
  • 4 slices turkey bacon
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine hash browns with salt and pepper.
  3. Press the hash brown mixture into the bottom of a greased muffin tin to form a cup.
  4. Pre-bake the hash brown cups for 15 minutes.
  5. In another bowl, whisk together the eggs and then add diced ham and cheese.
  6. Remove the muffin tin from the oven and pour the egg mixture into each hash brown cup.
  7. Crumble cooked turkey bacon and sprinkle on top.
  8. Bake for an additional 15-20 minutes or until the egg is set.
  9. Let cool for a few minutes before serving.
