Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix Greek yogurt, honey, and vegetable oil until smooth.
  3. Add in eggs and vanilla extract, then whisk until combined.
  4. In another bowl, combine flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Gently fold in the blueberries.
  7. Pour the batter into a lined muffin tin, filling each cup about 2/3 full.
  8. Bake for 15-20 minutes or until a toothpick comes out clean.
