Greek Chicken Bowls

Delicious Greek chicken bowls made with marinated chicken, fresh veggies, and a tangy dressing. Perfect for a quick weeknight dinner!

  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups quinoa, cooked
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives, pitted and halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a bowl, combine olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Marinate the chicken in the mixture for at least 30 minutes.
  2. Grill or sauté the chicken over medium heat until fully cooked, about 6-7 minutes per side. Let it rest, then slice.
  3. In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, feta cheese, olives, red onion, and parsley.
  4. Toss the salad mixture with the remaining marinade before adding sliced chicken on top.
  5. Serve the bowls warm and enjoy!

Notes

  • For extra flavor, add a dollop of tzatziki sauce on top before serving.
