- 1 pound boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups quinoa, cooked
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 cup feta cheese, crumbled
- 1/4 cup Kalamata olives, pitted and halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- In a bowl, combine olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Marinate the chicken in the mixture for at least 30 minutes.
- Grill or sauté the chicken over medium heat until fully cooked, about 6-7 minutes per side. Let it rest, then slice.
- In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, feta cheese, olives, red onion, and parsley.
- Toss the salad mixture with the remaining marinade before adding sliced chicken on top.
- Serve the bowls warm and enjoy!
