Ingredients

  • 1 pound fresh mozzarella cheese
  • 2 cups cherry tomatoes
  • 1/4 cup fresh basil leaves
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar

Instructions

  1. Slice the cucumbers into thick slices.
  2. Cut the mozzarella into bite-sized cubes.
  3. Halve the cherry tomatoes.
  4. In a large bowl, combine cucumbers, mozzarella, tomatoes, and basil.
  5. Drizzle with olive oil and balsamic vinegar.
  6. Season with salt and pepper to taste.
  7. Toss gently to combine.
  8. Serve immediately or chill in the refrigerator for 30 minutes before serving.
