Fresh Cucumber Caprese Salad

A refreshing and colorful salad perfect for summer gatherings.

Ingredients

  • 2 large cucumbers
  • 1 pound fresh mozzarella cheese
  • 1 pint cherry tomatoes
  • 1 bunch fresh basil leaves
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • salt to taste
  • pepper to taste

Instructions

  1. Slice the cucumbers into rounds and arrange them on a serving platter.
  2. Cut the mozzarella into slices and place them on top of the cucumbers.
  3. Halve the cherry tomatoes and scatter them over the salad.
  4. Tuck in the fresh basil leaves throughout the salad.
  5. Drizzle with olive oil and balsamic vinegar.
  6. Season with salt and pepper to taste.
