This fresh corn and turkey bacon side dish is a delightful addition to any meal!

  • 4 ears fresh corn, husked and kernels removed
  • 6 slices turkey bacon, chopped
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh parsley

Instructions

  1. In a large skillet, cook the turkey bacon over medium heat until crispy.
  2. Remove the bacon and set aside, leaving the drippings in the skillet.
  3. Add olive oil, corn, salt, and pepper to the skillet and cook for 5-7 minutes, stirring occasionally.
  4. Once the corn is tender, add the bacon back into the skillet and stir to combine.
  5. Garnish with fresh parsley before serving.
