- 1 pound elbow macaroni
- 4 cups beef broth
- 1 large onion, thinly sliced
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups shredded Gruyere cheese
- 1 cup shredded mozzarella cheese
- 1 teaspoon thyme
- Salt to taste
- Black pepper to taste
- Preheat the oven to 350°F (175°C).
- Cook the macaroni according to package instructions until al dente; drain and set aside.
- In a large pot, melt the butter over medium heat. Add the onions and cook until caramelized, about 15-20 minutes.
- Sprinkle the flour over the onions and stir to combine. Cook for another 2 minutes.
- Slowly add the beef broth, stirring constantly until the mixture thickens.
- Stir in the thyme, salt, and pepper.
- Add the cooked macaroni and cheese into the pot, mixing well.
- Transfer the mixture to a baking dish and top with shredded cheeses.
- Bake for 25-30 minutes or until bubbly and golden.
Notes
- For an extra flavor boost, add a splash of white wine to the onion mixture.
