French Onion Soup Mac & Cheese

A delicious blend of traditional French onion soup flavors and creamy mac and cheese.

  • 1 pound elbow macaroni
  • 4 cups beef broth
  • 1 large onion, thinly sliced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups shredded Gruyere cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon thyme
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the macaroni according to package instructions until al dente; drain and set aside.
  3. In a large pot, melt the butter over medium heat. Add the onions and cook until caramelized, about 15-20 minutes.
  4. Sprinkle the flour over the onions and stir to combine. Cook for another 2 minutes.
  5. Slowly add the beef broth, stirring constantly until the mixture thickens.
  6. Stir in the thyme, salt, and pepper.
  7. Add the cooked macaroni and cheese into the pot, mixing well.
  8. Transfer the mixture to a baking dish and top with shredded cheeses.
  9. Bake for 25-30 minutes or until bubbly and golden.

Notes

  • For an extra flavor boost, add a splash of white wine to the onion mixture.
  • Feel free to mix different types of cheese for a more complex flavor.
