French Onion Chicken Orzo Casserole

  • 2 cups cooked orzo pasta
  • 1 pound boneless, skinless chicken breasts
  • 2 cups French onion soup
  • 1 cup shredded mozzarella cheese
  • 1 cup chopped onions
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the onions and garlic, and sauté until softened.
  3. Add the chicken breasts and cook until browned. Season with thyme, salt, and pepper.
  4. Stir in the cooked orzo and French onion soup until well combined.
  5. Transfer the mixture into a greased baking dish and top with shredded mozzarella cheese.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
