  • 3 bananas mashed
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix the pumpkin puree, mashed bananas, and almond butter until well combined.
  3. Add honey or maple syrup, pumpkin pie spice, baking soda, salt, and vanilla extract; mix until smooth.
  4. Pour the batter into the muffin tin, filling each cup about 2/3 full.
  5. Bake for 20-25 minutes or until a toothpick comes out clean.
  6. Let cool for a few minutes before transferring to a wire rack.
