  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 4 cups vegetable broth
  • 1 cup diced tomatoes

  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon lemon juice
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add garlic and cumin, cooking until fragrant.
  2. Add the chickpeas, broth, diced tomatoes, salt, black pepper, and red pepper flakes. Bring to a boil.
