Easy Cheeseburger Soup Recipe

A warm and hearty cheeseburger soup made with turkey bacon for a delicious twist.

Ingredients

  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups diced potatoes
  • 1 cup shredded carrots
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • to taste salt and pepper

Instructions

  1. In a large pot, cook turkey bacon until crisp. Remove and crumble.
  2. In the same pot, cook ground turkey until browned.
  3. Add onion and garlic, cooking until softened.
  4. Pour in chicken broth and bring to a boil.
  5. Add potatoes and carrots, simmer until tender.
  6. Stir in milk, cheddar cheese, Worcestershire sauce, thyme, salt, and pepper. Cook until cheese is melted.
  7. Serve topped with crumbled turkey bacon.

Notes

  • For a spicier soup, add some diced jalapeños.
  • This soup can be made ahead and stored in the fridge.
