Easy Bean and Cheese Enchiladas

A delightful dish that combines the richness of beans and cheese in a simple enchilada recipe, perfect for any dinner.

  • 1 can black beans
  • 2 cups shredded cheese
  • 8 corn tortillas
  • 1 cup enchilada sauce
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add onions and sauté until translucent.
  3. Add black beans, cumin, chili powder, and half of the cheese to the skillet. Stir until well combined.
  4. Warm the tortillas until pliable. Fill each tortilla with the bean mixture and roll them up.
  5. Place the rolled tortillas seam-side down in a baking dish. Pour enchilada sauce over the top and sprinkle with remaining cheese.
  6. Bake for 20-25 minutes, or until the cheese is bubbly and golden.
  7. Garnish with chopped cilantro before serving.
