- 1 can black beans
- 2 cups shredded cheese
- 8 corn tortillas
- 1 cup enchilada sauce
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 tablespoon olive oil
- 1/2 cup diced onion
- 1/4 cup chopped cilantro
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add onions and sauté until translucent.
- Add black beans, cumin, chili powder, and half of the cheese to the skillet. Stir until well combined.
- Warm the tortillas until pliable. Fill each tortilla with the bean mixture and roll them up.
- Place the rolled tortillas seam-side down in a baking dish. Pour enchilada sauce over the top and sprinkle with remaining cheese.
- Bake for 20-25 minutes, or until the cheese is bubbly and golden.
