Decadent Coffee Mousse

Ingredients

  • 1 cup heavy cream
  • 1/2 cup strong brewed coffee
  • 1/4 cup sugar
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 envelope unflavored gelatin
  • 3 tablespoons cold water

Instructions

  1. In a bowl, combine coffee, sugar, and egg yolks. Place over simmering water and stir until thickened.
  2. Dissolve gelatin in cold water, then stir into the coffee mixture.
  3. Whip the heavy cream to stiff peaks. Fold it into the coffee mixture gently.
  4. Pour into serving dishes and refrigerate for at least 4 hours until set.
