Crockpot Healthy White Chicken Chili

  • 1 pound boneless, skinless chicken breasts
  • 2 cans (15 ounces each) white beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 cup chicken broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon cumin
  • 1 teaspoon chili powder
  • 1 green bell pepper, diced
  • 1 jalapeño, diced (optional)
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add the white beans, corn, chicken broth, onion, garlic, cumin, chili powder, green bell pepper, and jalapeño (if using).
  3. Season with salt and pepper.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through.
  5. Remove the chicken, shred it, and return it to the pot. Stir to combine.
  6. Serve warm with cheese on top if desired.
