2 pounds beef stew meat
4 cloves garlic, minced
1/2 cup unsalted butter
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon dried thyme
2 pounds potatoes, peeled and cut into chunks
1/4 cup fresh parsley, chopped
Instructions
In a large skillet, melt the butter and sauté the garlic until fragrant.
Add the beef stew meat to the skillet and brown on all sides.
Transfer the beef to the crockpot and season with salt, pepper, and thyme.
Add the potato chunks on top of the beef in the crockpot.
Cook on low for 6-8 hours or until the beef is tender.
Once cooked, stir in the chopped parsley before serving.
