Crockpot Chicken Wild Rice Soup

  • 1 cup wild rice, rinsed
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Place the chicken, wild rice, broth, carrots, celery, onion, garlic, thyme, and pepper in a crockpot.
  2. Cook on low for 6-8 hours or high for 4-5 hours, until the chicken is cooked through.
  3. Remove the chicken, shred it, and return it to the crockpot.
  4. Stir in the heavy cream and parsley, and let it heat through for an additional 10 minutes.
  5. Serve hot and enjoy!
