- 1 pound chicken breasts, boneless and skinless
- 1 cup wild rice, rinsed
- 4 cups chicken broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1 cup heavy cream
- 2 tablespoons fresh parsley, chopped
- Place the chicken, wild rice, broth, carrots, celery, onion, garlic, thyme, and pepper in a crockpot.
- Cook on low for 6-8 hours or high for 4-5 hours, until the chicken is cooked through.
- Remove the chicken, shred it, and return it to the crockpot.
- Stir in the heavy cream and parsley, and let it heat through for an additional 10 minutes.
