Crockpot Chicken Wild Rice Soup

  • 1 pound chicken breasts
  • 1 cup wild rice
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon pepper
  • 1 cup heavy cream

Instructions

  1. In a crockpot, combine chicken, wild rice, chicken broth, carrots, celery, onion, garlic, thyme, rosemary, and pepper.
  2. Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is cooked through and rice is tender.
  3. Remove chicken, shred it, and return it to the crockpot.
  4. Stir in heavy cream and cook for an additional 30 minutes.
  5. Serve hot and enjoy your soup!
