  • 2 pounds boneless, skinless chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes with green chilies
  • 4 cups chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt to taste
  • Cilantro for garnish
  • 4 tortillas, cut into strips

Instructions

  1. Place the chicken in the crockpot and add the beans, corn, onion, garlic, tomatoes, chicken broth, chili powder, cumin, and salt.
  2. Stir well to combine the ingredients.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. Remove the chicken, shred it, and return it to the crockpot.
  5. Serve hot, garnished with cilantro and tortilla strips.
