Creamy Orzo with Roasted Butternut Squash and Spinach

  • 1 cup orzo
  • 2 cups butternut squash, diced
  • 2 cups fresh spinach
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • 1 cup vegetable broth
  • 1/2 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the butternut squash with olive oil, salt, and pepper, then roast for 25-30 minutes.
  3. In a pot, cook the orzo according to package instructions.
  4. In a skillet, sauté garlic until fragrant, then add spinach until wilted.
  5. Add roasted butternut squash and cooked orzo to the skillet.
  6. Pour in vegetable broth and heavy cream, mix thoroughly, and season with nutmeg.
  7. Serve hot, garnished as desired.
