Creamy Butternut Squash and Kale Lasagna

A comforting and creamy lasagna featuring butternut squash and kale, perfect for cozy meals.

Ingredients

  • 2 cups butternut squash, pureed
  • 2 cups fresh kale, chopped
  • 1 cup ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 1 box lasagna noodles
  • 2 cups marinara sauce
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine butternut squash puree, ricotta cheese, egg, garlic powder, onion powder, salt, and pepper.
  3. In a baking dish, spread a layer of marinara sauce.
  4. Layer lasagna noodles over the sauce, followed by half of the butternut squash mixture, half the kale, and a layer of mozzarella.
  5. Repeat the layers, finishing with noodles topped with marinara and remaining mozzarella and Parmesan.
  6. Bake for 45 minutes until bubbly and golden.
  7. Let it cool for a few minutes before slicing and serving.

Notes

  • For a vegetarian option, ensure all cheeses are rennet-free.
  • Can substitute spinach for kale if preferred.
