- 2 cups butternut squash, pureed
- 2 cups fresh kale, chopped
- 1 cup ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1 cup Parmesan cheese, grated
- 1 box lasagna noodles
- 2 cups marinara sauce
- 1 egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine butternut squash puree, ricotta cheese, egg, garlic powder, onion powder, salt, and pepper.
- In a baking dish, spread a layer of marinara sauce.
- Layer lasagna noodles over the sauce, followed by half of the butternut squash mixture, half the kale, and a layer of mozzarella.
- Repeat the layers, finishing with noodles topped with marinara and remaining mozzarella and Parmesan.
- Bake for 45 minutes until bubbly and golden.
- Let it cool for a few minutes before slicing and serving.
