Coffee Cake Muffins

Deliciously soft and moist coffee cake muffins topped with a crumbly streusel, perfect for breakfast or as a sweet treat.

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup sour cream
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mix the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine the sour cream, oil, egg, and vanilla extract.
  4. Fold the wet ingredients into the dry ingredients until just combined.
  5. In a small bowl, mix the brown sugar, cinnamon, and nuts for the streusel topping.
  6. Fill each muffin cup halfway with batter, sprinkle with streusel, then top with remaining batter and more streusel.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow to cool before serving.

Notes

  • For a healthier option, replace sour cream with yogurt.
  • Best served fresh but can be stored in an airtight container.
