Ingredients

  • 1/2 cup protein powder
  • 1/4 cup coconut sugar
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon

  • 2 tablespoons melted coconut oil

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, combine the dry ingredients: flour, protein powder, coconut sugar, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together the wet ingredients: milk, eggs, and melted coconut oil.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  7. Allow to cool before serving.

Notes

  • For added sweetness, consider drizzling with a light glaze made of powdered sugar and milk.
