  • 1/4 cup brown sugar
  • 1 tablespoon ground cinnamon for filling

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, combine the milk, melted butter, eggs, and vanilla extract.
  4. Fold the wet ingredients into the dry ingredients until just combined.
  5. In a small bowl, mix the brown sugar and ground cinnamon together for the filling.
  6. Fill each muffin cup halfway with batter, sprinkle with the cinnamon filling, then top with more batter until 3/4 full.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Allow to cool slightly before serving.
