Chicken & Veggie Soup

A nourishing bowl of Chicken & Veggie Soup filled with wholesome ingredients to warm your soul.

Ingredients

  • 1 pound chicken breast, diced
  • 2 cups carrots, sliced
  • 2 cups celery, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups green beans, trimmed
  • 1 cup corn kernels
  • 1 cup peas

Instructions

  1. In a large pot, heat a little oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent.
  2. Add the diced chicken and cook until no longer pink.
  3. Stir in the carrots, celery, and green beans, and cook for a few minutes.
  4. Pour in the chicken broth and bring to a boil.
  5. Add thyme, salt, and pepper, then reduce heat and let simmer for 20 minutes.
  6. Add corn and peas, and let cook for an additional 5 minutes.
  7. Serve hot and enjoy!

Notes

  • Feel free to add your favorite herbs for extra flavor.
  • Leftover chicken can be used for a quicker prep time.
