- 1 pound chicken breast, diced
- 2 cups carrots, sliced
- 2 cups celery, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 8 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups green beans, trimmed
- 1 cup corn kernels
- 1 cup peas
- In a large pot, heat a little oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent.
- Add the diced chicken and cook until no longer pink.
- Stir in the carrots, celery, and green beans, and cook for a few minutes.
- Pour in the chicken broth and bring to a boil.
- Add thyme, salt, and pepper, then reduce heat and let simmer for 20 minutes.
- Add corn and peas, and let cook for an additional 5 minutes.
- Serve hot and enjoy!
