Chicken Salad Stuffed Avocado

Ingredients

  • 2 ripe avocados
  • 2 cups cooked chicken, shredded
  • 1/2 cup Greek yogurt
  • 1/4 cup diced celery
  • 1/4 cup chopped red onion
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine shredded chicken, Greek yogurt, celery, red onion, Dijon mustard, and lemon juice.
  2. Mix well and season with salt and pepper.
  3. Cut avocados in half and remove pits.
  4. Spoon the chicken salad into each avocado half.
  5. Serve immediately, or chill until ready to serve.
