2 cups cooked chicken, shredded
1 cup corn kernels
4 slices turkey bacon, chopped
1 medium onion, diced
2 cloves garlic, minced
3 cups chicken broth
2 cups heavy cream
2 medium potatoes, diced
1 teaspoon thyme
Salt and pepper to taste
Instructions
In a large pot, cook turkey bacon until crispy. Remove and set aside, leaving the drippings in the pot.
Add onion and garlic to the pot, sautéing until translucent.
Add diced potatoes, corn, and chicken broth. Bring to a boil.
Reduce heat and let it simmer until potatoes are tender.
Stir in shredded chicken, thyme, and cream. Cook until heated through.
Season with salt and pepper. Serve hot, garnished with crispy turkey bacon.
Notes
This chowder can be made ahead of time and stored in the fridge.
For a thicker consistency, mash some of the potatoes before adding the cream.
