Chicken and Corn Chowder

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup corn, frozen or fresh
  • 1 cup potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup milk
  • 2 tablespoons butter
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Stir in potatoes and thyme, cook for a few minutes.
  4. Pour in the chicken broth and bring to a boil.
  5. Reduce heat and simmer until potatoes are tender.
  6. Add corn and shredded chicken.
  7. Stir in milk, and cook until heated through.
  8. Season with salt and pepper to taste. Serve hot.

Notes

  • For a creamier chowder, blend a portion of the mixture before adding the corn and chicken.
