  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 teaspoon cream of tartar

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
  3. Add the pumpkin, egg, and vanilla, and mix until well combined.
  4. In another bowl, whisk together the flour, baking soda, cinnamon, nutmeg, salt, and cream of tartar.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Use a cookie scoop to drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
