  • 1.5 pounds chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 cup diced peppers
  • 1 cup chicken broth

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Season chicken thighs with salt, pepper, paprika, and garlic powder.
  3. Add chicken to the pan and cook until browned on both sides.
  4. Remove chicken and set aside.
  5. In the same pan, add diced peppers and sauté until tender.
  6. Add rice and stir to combine.
  7. Pour in chicken broth and bring to a boil.
  8. Return the chicken to the pan, cover, and reduce heat to low.
